[Recipe] One Pot Chili Mac & Cheese

I found on pinterest some of these new one pot pasta recipes and I just had to try it. It sounds easy and very delicious.

For my first try I choose a recipe I found on pinterest posted by Damn Delicious. You can find her recipe here. Since I am doing Weight Watchers I adjusted the recipe a little bit ;-)

Ingredients
4 servings

1 spray of canola oil cooking spray
1 lb ground beef 90% lean
2 gloves garlic
1 onion, medium
4 cups chicken broth, sodium reduced
1 can (14.5 oz) diced tomatoes
1 can light red kidney beans (drained)
1 can chili beans (not drained)
1 cup cheddar cheese, 2% reduced fat
10 oz elbow noodles, whole wheat
pepper, salt, chili powder

Just spray the canola oil in a large skillet or dutch oven over medium/high heat. Add the ground beef and cook until brown; drain excess fat. Add the chopped garlic and onions and cook until onions are glazed.

Stir in chicken broth, diced tomatoes, red kidney beans and the chili beans. Bring it to a simmer and add the pasta. Bring to a boil; cover and reduce heat. Let it simmer until pasta is cooked through, about 13-15 minutes. Season to taste with pepper, salt and chili power. At last add the cheese, cover the pot up and let it melt.

Enjoy your food :-)

Family BBQ & Baptism

Our last saturday was really busy - again ;-)

We went in the morning to a baptism which was like 30-40 minutes from our place. It was a great ceremony and little Eva is such a cutie pie :-) so happy we were a part of this!

After the church we had to say good-bye to the parents - our good friends - because we got invited to JT's dad's surprise birthday party. Attendance mandatory :-D

It was such a great day. Family and friends all united, great weather, bbq, kids runnin around. I just loved that! Later the day my sisters-in-law found out that I never had s'mores yet. So everyone scrambled together, got all the ingredients and the bonfire got started.

So I had my first s'more - so delicious and yammi :-D for everyone who doesn't know what s'mores are: they are a traditional night time campfire treat here in the United States. They consist of a roasted marshmallow and a layer of chocolate in between two pieces of graham cracker :-) if you have the chance, try them! :-)

Thank you Festival & Beach-Day

JT's birthday was on thursday and I took the day off to prep a little surprise for him.

When he came back home from work, I surprised him with a birthday table with some his favorites sweets including a german cake ;-)

We enjoyed a nice afternoon together and than we had to leave for his actual birthday present. I got us tickets for the Thank you Festival at Merriweather Post Pavillion with Krewella, Tiesto and Co. I told him a week before so that he was able to take off early on his birthday and the next day completly.

It was a great experience and so much fun :-) I am so glad, my hubby liked it and enjoyed his birthday very very much:-)

On friday we or my hubby decided that we need a beach day, so we left early saturday morning to Rehoboth Beach in Deleware. We went to the Deleware Seashore Park :-) Last year around this time we were there with my parents and JT popped the question :-)

I have to admit I was a little bit concerned because just lately we had the very first shark attack in Lewes, DE which is like 20 minutes from the Park we went to. All in all it was a really nice day, but both of us - even with umbrella and sunscreen - got a nice sunburn :-/

After a long day at the beach JT took me out to the restaurant where we celebrated last year our engagement with my parents :-) it was a really great day and weekend!!!
